Potato, chickpeas, onion, and coriander chutney filled with crispy puri dipped into spicy mint-flavored water (pudina Panipuri pani) that quickly fills anyone’s mouth and takes our taste buds to heaven. A popular street snack in India, known as gol gappe, puchka, pakodi, Pani Puri, etc.
Preparing Spearmint (pudina) water and fillings (Masala) for panipuri at home is not only healthy but also allows you to customize it in your own way. So, let’s begin with this amazing recipe below:
Pani Puri Ingredients : |
32 Golgappa or Puris (ready-made or homemade) |
1 finely chopped medium Onion |
1/2 cup Sev |
1/4 cup Date Tamarind Chutney – optional |
Ingredients for Pani: |
1/2 cup Mint Leaves |
1/2 cup Coriander Leaves, chopped |
1-2 Green Chilli, chopped (or to taste) |
1/2 inch pieces of Ginger |
1½ medium size Lemon |
3 tablespoons Sugar |
1 teaspoon Chaat Masala Powder |
1/4 teaspoons Black Salt (kala namak / sanchal) |
4 tablespoons Boondi, optional |
Salt to taste |
4 cups Water |
Ingredients for Masala: |
1½ cups boiled peeled & mashed Potato (approx. 3 medium) |
1/2 cup boiled Kala Chana (black chickpeas) |
1/2 teaspoon Red Chilli Powder |
1/2 teaspoon Cumin-Coriander Powder |
1/4 teaspoon Chaat Masala Powder |
2 tablespoons finely chopped Coriander Leaves, optional |
Salt to taste |
Panipuri Pani Recipe | How to make panipuri water?
- Rinse mint leaves and coriander in water and take all the ingredients of Water/pani.
- Now add coriander leaves, mint leaves, green chili, lemon, and ginger juice (lemon juice is added while grinding) in a small chutney jar.
- Grind until it becomes a smooth paste and if required, you can also add 1/4 cup of water while grinding.
- Now transfer them to a large bowl, add black salt, chaat masala powder, and 4 cups of water. Now Stir it with a large spoon and mix it properly. Add salt if required as per your taste. Now your Panipuri Pani is ready; freeze it for at least 1 hour before serving. In Addition, you can also add a soft boondi and mix it. And you are done.
Pani Puri Filling Recipe | How to make Panipuri Masala?
- Take some mashed potato as per the quantity you need, Black Chickpeas/kala chana, red chili powder, chaat masala powder, cumin-coriander powder, coriander leaves, and some salt (add a small amount as you have added a bit of salt in pani/water also) in a bowl.
- Mix the masala properly with a spoon or hand for better mixing. And Your Masala or Filling is ready.
How to Eat Pani Puri?
- Take each puri or Gol Gappa and gently make a medium size hole on its top-middle side with your index finger and use your index finger and thumb for Filling/stuffing.
- Now Stuff it with masala and dip stuffed Gol Gappa into panipuri Pani/water. And eat that water-loaded filled masala gol gappa.
